I love ginger and ale, and I love ginger ale. But I don't love super sugary drinks, and most ginger ale is rather sugary for my taste (my favorite store-bought brand has 59 g of sugar in a 20 oz serving!).
I did some rough calculations of the sugar content of my ginger ale, and it's about 37.5 g of sugar per 20 oz. This still seems rather sugary to me, so I'll be working on versions with less and less sugar moving forward; but for now, below is my recipe for a crisp and super simple homemade ginger ale.

Super Simple Homemade Ginger Ale
Final size: 3/4 Liter (I use the hermetically sealing IKEA bottles)
1/4 cup sugar
1/8 tsp active yeast
1" knob of ginger (or more for more gingery), grated
juice of 1 lemon or 1 lime (or a combination, whatever you prefer)
water to fill

Using a funnel, pour the sugar and yeast into an air-tight 3/4 liter bottle. Next, put the ginger through the funnel with the help of a chopstick or something similar.

Then pour in the lemon, lime, or lemon-lime juice and fill to the top with water.

Let this delightful concoction sit at room temperature in a cupboard or a dark corner of your kitchen counter for 24 hours and then place in the fridge.
Drink when chilled, and enjoy!
